Check out the root vegetable parsnips which are pretty popular in the UK at this time of year. If you can get hold of some, try simply roasting them in a preheated oven at 200C.
Do peel them first and cut them lengthways to create even sized pieces. Then roast them in a tin for 40-45 minutes turning them halfway through cooking.
